The Long Light
Black tea, grapefruit and lemon make a proper grown-up drink: brisk, layered and built for a full evening.

Ingredients
- 2 ounces strong black tea, brewed and chilled
- 1 ounce fresh grapefruit juice
- 1/2 ounce fresh lemon juice
- 1/2 ounce honey syrup (equal parts honey and warm water)
- 3 ounces chilled sparkling water
- Grapefruit peel or rosemary sprig
Instructions
- Add tea, grapefruit juice, lemon juice and honey syrup to a shaker with ice.
- Shake for 8 to 10 seconds and strain into an ice-filled tall glass.
- Top with sparkling water, stir once and garnish.
Make it yours
Use decaffeinated tea for late evenings, or replace grapefruit with orange for a rounder, sweeter version.
